Never a dull moment in Juneau! The day after my boyfriend left, my sister and her boyfriend sailed in as part of their Inside Passages Sailing Adventure! To welcome them I decided to have a little something light and what more perfect on a summer day than a Watermelon and Feta salad (pg. 282): the perfect combo.
This was by far the easiest recipe in the cookbook! The cutting of the watermelon took me the longest. Note: you do not need a whole watermelon! I have a nice half left over 🙂 The addition of the basil and thinly sliced onion was perfect, making a nice touch.
