I’ve been a vegetarian for 11 years. Throughout those years I have discovered the joys of cooking vegetarian and vegan dishes – the creativity, the variety, the cultural differences, the “new-ness,” and, yes, the difficulties. I have greatly enjoyed these experiences and I learn something new about food and about myself every time.
For my birthday, my boyfriend gifted me “Plenty: Vibrant Vegetable Recipes from London’s Ottolenghi,” a vegetarian cookbook by Yotam Ottolenghi. I was ecstatic! The cookbook is filled with delicious looking recipes and beautiful, vibrant photos. I decided to cook my way through the book, and blog about my experience in a very “Julie & Julia” kind of way.
I understand this is not a novel concept, but after hearing that some of the recipes are difficult and take time (and money), I decided to try it. This will probably take me a long time, and, yes, there’s a chance I may not finish. But I am going to give it a try! The recipes look like a true vegetarian’s delight.
